Our story is one of passion and commitment. We are a native Colorado family with a tradition of exceptional butchery. For generations, our family has upheld the time-honored tradition of offering the highest quality meats and ingredients to those who truly appreciate them.

Our history starts with our family, with deep Colorado roots. We were raised in the small town of Wray, Colorado by parents who taught us that honesty, character, integrity, and hard work will bring success and joy in all we do.  During our childhood, our parents owned a grocery store where we were taught small business principles and were required to work and support the family business.  During Mitch’s high school years, our Dad taught him the trade of butchery, which he has perfected over the years. Our parents sold the grocery store business and opened a Meat Processing Plant, where our two brothers own and manage the business today.

In our adulthood, Mitch has gone on to work for major grocers and small retailers in their butcher department, perfecting his craft.  Tammy’s career has been focused on corporate sales and communications. Over the years, we noticed that the neighborhood butcher shops we once knew and worked in growing up had evolved into big-box grocery stores selling mass-produced prepackaged meat.  We found ourselves missing something that once felt so natural—a local neighborhood butcher shop where people knew your name, crafted cuts were a point of pride, and genuine customer service wasn’t the exception but the expectation. That small‑town feeling, and the sense of connection, had faded. We wanted to bring it back.

That challenge sparked an idea—and ultimately, a shared mission. We started with a simple truth: the small‑town butcher shop—the kind where people knew you, they cared about what you were cooking, and took pride in every cut they made.  Our goal is to restore that feeling and connection, and to provide the kind of customer service that makes a neighborhood feel like home.  For Kiel, an avid home cook and Tammy’s son, the search for exceptional ingredients was constant. He wanted access to the same premium cuts found in top restaurants and steakhouses, but sourcing those premium cuts, and specialty meats proved surprisingly difficult. The ingredients existed—but not in a place where everyday people could access them with ease.

Therefore, the three of us came together with one purpose:  to offer the finest meats and ingredients to anyone who values quality.  From discerning home cooks to elite culinary professionals, we believe everyone deserves access to exceptional, thoughtfully sourced cuts and a butcher shop experience rooted in pride, craft, and genuine hospitality.

Prime & Proper is our way of restoring what was lost—reviving the neighborhood butcher shop with modern standards, premium offerings, and the personal touch that makes every visit feel special.
